Este semillero tiene como objetivo el estudio de las técnicas de crioconcentración para profundizar en el conocimiento de esta nueva tecnología, evaluando las diferentes fenomenos y variables que afentan a la operación, para obtenmer productos de alta calidad sensorial y mas económicos; logrando un avances en la frontera del conocimiento de la operación que permita el uso industrial de esta nueva y emergente tecnología.
