El uso de insectos para consumo humano es una de las mejores opciones que se han planteado recientemente como alternativa a la producción sostenible de proteínas de origen animal, ya que su porcentaje de proteína bruta es similar e incluso superior a las carnes tradicionales y contiene 9 aminoácidos esenciales. Por lo tanto, la industria de los insectos para consumo humano tiene un potencial inmenso, de acuerdo con varios estudios de mercado, las tasas de crecimiento anuales para consumo humano serán del 70% y las ventas estimadas serán de 1.5 billones de dólares para el año 2021. Esto representa una gran oportunidad para que Cundinamarca sea pionera en Colombia y Latinoamérica, junto con la empresa ArthroFood (ubicada en La Mesa, Cundinamarca), en esta industria y, de esta forma, entrar en un nuevo mercado con alto potencial de crecimiento de la mano de mujeres rurales, involucrándolas en la cadena de valor de la producción de insectos. De este modo, parte importante del proyecto es mejorar las condiciones materiales y simbólicas de algunas mujeres rurales del municipio de La Mesa.

The use of insects for human consumption has recently been one of the best options to generate an alternative to produce sustainable production of proteins from animal origin. Its brute percentage of protein is similar and even higher to traditional meats; it contains 9 essential amino acids. Thus, the industry of insects for human consumption has an immense potential, in accordance to various marketing studies, the annual rate of growth for human consumption will be 70% and the estimated sells 1.5 billion dollars for 2021. This represents a great opportunity for the Department of Cundinamarca to become a pioneer in Colombia and Latin America, together with the company ArthroFood (located in La Mesa, Cundinamarca) in this industry. Also, to enter on a new market of high potential of growing, along with the involvement of rural women in the value chain of insects´ production. Hence, important part of the project is to improve the material and symbolic conditions of rural women in the municipality of La Mesa.
